Irish Cheddar and Potato Gratin
This cheesy combination is a delicious dish to serve at the holiday table. Pass the potatoes!
TOTAL TIME:1 hour 15 minutes
- 4 lbs. russet potatoes, washed and thinly sliced (soak in water to prevent browning)
- 2Ā½ cups Irish cheddar, grated
- 1Ā½ cups heavy cream
- Ā½ onion, diced
- 1 tsp. thyme, minced
- Ā¼ lb. bacon, crumbled (optional)
- 1 bunch scallions, chopped (optional)
Preheat oven to 375Ā°
Butter a square baking dish. Layer 1 pound of the sliced potatoes in the pan. Next, add Ā¼ cup of grated Irish Cheddar. Repeat until all potatoes and cheese are used.
In a medium saucepan, sautĆ© onions, then add the heavy cream and thyme. When warmed, pour over the potatoes.
Place in the oven and bake for an hour until the potatoes are tender and cheese bubbly.
Top with bacon and scallions if desired.
