Grilled Salmon with Mediterranean Salsa
Savory vegetables and a bit of mint bring great flavor to this salmon recipe.

- Â½ cup English cucumber, chopped
- 2 Roma tomatoes, seeded and chopped
- Â¼ cup red onion, chopped
- Â¼ cup Kalamata olives, cut in half
- 2 Tbsp. fresh mint, chopped
- 2 Tbsp. olive oil
- Â½ tsp. lemon zest
- Â¼ tsp. Kosher salt
- 4 6 oz. salmon filets, skin removed
- 1 Tbsp. olive oil
- Â¾ tsp. Kosher salt
- Â½ tsp. ground black pepper
In a bowl toss together cucumber, tomato, onion, olives, mint, oil, lemon zest and salt; set aside.
Heat grill; gas grill to medium-high heat or charcoal until ashes are white. Season salmon with oil, salt and pepper.
Grill salmon, skin side up, 4-5 minutes or until fish easily releases from the grill; flip and continue cooking 3-5 minutes or until internal temperature reaches 145Â°F and flakes easily with a fork. Serve with salsa.
